Cinnamon Pancakes

- 1 1/4 cups flour
- 1 1/2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1 tablespoon cinnamon
- 3/4 teaspoon salt
- 1 1/3 cups milk
- 1 egg, lightly beaten
- 3 tablespoons vegetable oil
- 3/4 teaspoon vanilla extract

- Add all dry ingredients to a medium-sized bowl and whisk until homogeneous.
- Add remaining ingredients and whisk until combined with few lumps. Do not overmix.
- Allow batter to rest for ~5 minutes.
- On a nonstick pan or griddle heated to 375℉, pour ~1/4 cup of batter for each pancake. Cook for 1 1/2 minutes per side or until golden brown and fully cooked through.
