Cinnamon Pancakes

  • 1 1/4 cups flour
  • 1 1/2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon cinnamon
  • 3/4 teaspoon salt
  • 1 1/3 cups milk
  • 1 egg, lightly beaten
  • 3 tablespoons vegetable oil
  • 3/4 teaspoon vanilla extract

  1. Add all dry ingredients to a medium-sized bowl and whisk until homogeneous.
  2. Add remaining ingredients and whisk until combined with few lumps. Do not overmix.
  3. Allow batter to rest for ~5 minutes.
  4. On a nonstick pan or griddle heated to 375℉, pour ~1/4 cup of batter for each pancake. Cook for 1 1/2 minutes per side or until golden brown and fully cooked through.
