Cocktail Meatballs

  • 2 pounds lean ground beef
  • 2 packets onion soup mix
  • 1 egg
  • 12 ounces black currant jelly (optionally sub any jelly/jam of choice)
  • 12 ounces ketchup

  1. In a large bowl, add egg, ground beef, and soup mix packets and mix by hand until well combined. Try to avoid overworking the beef.
  2. Form mixture into ~1 inch meatballs and arrange on a parchment-lined sheet pan. Generally aim for around 50 meatballs for 2 pounds of beef.
  3. Bake meatballs at 350°F for ~20 minutes or until fully cooked.
  4. When meatballs are nearly done, add jelly and ketchup to a slow cooker on its low setting, stirring until the jelly incorporates.
  5. Add meatballs to slow cooker with the sauce, then cover and slow cook for two hours, stirring occasionally.
